Honestly I knew someone in HK who made them.
Not sure I would want to eat sandwiches that were made in the UK, transported to the airport, waited at the airport for a while, loaded on the plane, flown to HK, waited around at HK airport, transported to the store. Even chilled they are not going to be exactly fresh are they?
@hullexile - I am now determined to go take photos of their packaging labels over the CNY break.
Will report back on breads, sandwiches and other assorted food products, if I get down to one of their stores.

The HK manufactured sandwich seems to have a local label which is stuck on their UK packaging?
I first checked the chicken as I thought M&S may commit to 'british chicken' in their sandwiches so would be UK but the ones I checked are now HK made.
I checked eggs as I figured it would be pricey to source free range here...
Which question should I be asking:
A) Why would M&S ship lemon grass from North Africa to Hong Kong?
B) Why would anyone buy lemon grass in Hong Kong that was imported from Morocco and not from South East Asia?
