    Looks great but thanksgiving was over a month ago.

    Brining the turkey never fails, no worries about light vs dark meat, a real crowd pleaser.

    Tandoori turkey was also great.

    More often than not, it’s a Prime Rib Roast rather than turkey here… done with a horseradish crust, low-temp roasted til the remote probe reaches 128ºF.

    In larger gatherings where a turkey might be added to the roster, we’re more looking forward to the turkey congee coming from the leftovers & carcass than the initial serving.

    Looks amazing!. We do a "rustic cassoulet" with the turkey carcass, leftover ham and whichever dried white bean I have in the house - this year it'll be cannellini. I've also used Great Northern Beans. It's actually my favorite leftover.

    In the past when we have made a turkey, we have had turkey fajitas, turkey fried rice, turkey soup ... Up to a point where I would throw up if someone mentioned turkey..

    But yeah.. happy Thanksgiving

    Dark meat freezes well. Best to put some away and revisit it in a few weeks.
