More often than not, it’s a Prime Rib Roast rather than turkey here… done with a horseradish crust, low-temp roasted til the remote probe reaches 128ºF.
In larger gatherings where a turkey might be added to the roster, we’re more looking forward to the turkey congee coming from the leftovers & carcass than the initial serving.

Mac n cheese queued up for tomorrow. Just needs Parmesan breadcrumb topping before going in the oven.
Dark meat freezes well. Best to put some away and revisit it in a few weeks.
